What 86 means
In a kitchen, “86” means it’s gone. Out of salmon? 86 the salmon. Guest who won’t stop? 86’d. Bad idea? 86 it.
It’s one of the most useful words in the building. We think it deserves a bigger room.

Why hats
Because a hat says something before you do. Line cooks, drivers, barbers, bartenders, people who just like a good hat — different worlds, same attitude.
The first one is THE 86 HAT: a black trucker with the 86 Mark in raised white puff and red under the brim. No joke on it yet — just the signature every verdict after it will carry.

Where the ideas come from
From you. Everybody’s got something they’d 86. Put it on THE 86 LIST, the best ones become real designs, and limited drops go out the door.
Then somebody sees your hat and asks what you’d 86. And it starts again.
